The book tells how Will Guidara took charge of Eleven Madison Park, a struggling two-star brasserie in New York City, when he was twenty-six. As the book tells it, the restaurant was named the best in the world eleven years later. The change came through what the book calls unreasonable hospitality: reinventing the place, making the kitchen and the dining room true partners, and going far beyond what guests expect. It also covers leading a team, from giving praise and criticism to helping every employee think like an owner, and argues that any business can be a hospitality business.
